Mom’s Jumbo Prawns with Ginger and Scallions

What you need

green onion

tbsp soy sauce

tbsp sesame oil

gal cooking oil

tbsp water

tbsp table sugar

oz potato starch

white onion

tbsp oyster sauce

ginger

tsp salt & pepper

tbsp chicken bouillon powder
head fresh garlic

lb jumbo shrimp

jalapeno
Instructions
1. In a deep fryer, add 1 gallon of cooking oil and set to 375 F. 2. Lightly coat your jumbo shrimps with potato starch, salt, and pepper. 3. Once the oil is hot, add your shrimp and allow to cook for 3 minutes. Then allow to cool on a plate with a paper towel. Set aside for now. 4. In a small bowl, combine all the ingredients listed under “for the sauce”. Set aside. 5. In a large wok, heat 2 tbsp of oil over medium high heat. Once the oil is hot, add your sliced onion and ginger. Cook for 1 minute. 6. Add your sliced jalapeño and ginger. Cook for another minute. 7. Add your fried shrimps and sauce mixture. Combine and cook for another minute. 8. Add your green onions and turn off the heat. Combine again to make sure everything is well mixed together. 9.
